🦪 Oysters in Nationalpark Vadehavet
Nationalpark Vadehavet offers unexpected and overwhelming experiences, and there are many ways to explore the world's most important tidal zone. If you want to stimulate all your senses, an oyster safari is the ultimate experience. You get up close as we head out just a few hundred metres onto the tidal flats to find the oyster beds, where you can pick plenty of oysters — the world's most exquisite raw delicacy.

Psst… did you know?
The Vadehavet oyster is an invasive species — meaning it has not naturally lived in Vadehavet all its life. The oyster species that can be picked today off Rømø and along the coast is the Pacific Oyster, which was imported from Japan in the 1900s.
Previously, the European oyster lived here in large numbers but was almost completely wiped out by disease. Today, you might still be lucky enough to come across a European oyster — but not in nearly the same numbers as the Pacific Oyster.

❓ What you need to know about oysters
Where can you pick them?
On the north-eastern and south-eastern sides of Rømø — and many oysters are found off Hjerpsted/Højer. They are often gathered in large groups called oyster beds.
When is the season?
From October to the end of April. Oysters should only be eaten when the water temperature is cold enough to ensure no toxic algae are present. An old rule states that months with an "r" in them are oyster months.
Which species?
Around Rømø and up the coast to Esbjerg, you will find many oysters of the species Pacific Oyster (Crassostrea gigas).

🪣 How do you pick oysters?
When the tide is low enough, the oyster beds emerge from Vadehavet — just a few hundred metres from the coast. Once you have found an oyster bed, look for the oysters that have been above water for the shortest time, ensuring that any potential bacteria have been washed away by the seawater.
⚠️ Remember: The tide is influenced by weather and wind, so water levels may deviate from the forecast. We recommend going with a guide if you have not tried it before.

🍷 Once the oysters are picked
In the cold months from September/October until April, you can gather your own oysters — take them home to enjoy or savour them right there in the fresh air. Oysters can be enjoyed in many ways; in fact, only your imagination sets the limits. A great tip is to pair your oysters with a glass of wine or a cold beer.

An oyster safari in Nationalpark Vadehavet is both a nature and taste experience of international caliber — come out onto the flats and pick the world's most exquisite raw delicacy with your own hands. 🦪
